1 rack Pork ribs
1 Tbs Thyme, dry
1 Tbs Sugar
1 tsp Pepper
2 tsp Garlic powder

Coat ribs on both sides with thyme, then salt on both sides.
Coat one side with sugar.
Cover with water in cake pan or similar container and let marinate for at least 6 hours, preferably overnight. Variations: Add apple juice, Coke, or Dr. Pepper to marinade (any acid will do)
Discard marinade.
Remove membrane from underside of ribs.
Rub both sides of rib rack with salt, pepper, thyme, and garlic powder.
Wrap ribs in foil with fatty side on top, leaving open at top.
Smoke for 3 hours at 200°F.
Open the foil, so ribs are laying flat on the sheet of aluminum.
Smoke for 30 minutes at 225°F.
Brush top with BBQ sauce and smoke for another 30-45 minutes at 400°F until sauce begins to carmelize. Monitor to keep from burning.
Slice and serve.
